With the passing of roughly one week mold will start to become visually present. The mold begins as specks which, over time, grow larger. Finally, after one additional week the mold continues to accumulate on the bread until it reaches its final condition and the food source is exhausted. This particular natural clock varies greatly because of factors like the amount of bread, temperature, moisture level, and amount of preservatives. The two week time scale is for a loaf of bread roughly a foot long containing few, if any, preservatives and a temperature ranging from 75 to 85 degrees Fahrenheit.
Due to many factors which must be taken into account, molding bread as a natural clock is not especially accurate. Thus, dark bread like rye, bran, oat and Boston loaves develop mold much faster than dense and dry variants. Moisture in the environment also plays a critical role in how quickly mold spots develop on any type of loaf.
The bread that molded the fastest was the brown bread. We think this was because it has the least amount of preservatives. The white bread and the multigrain bread molded the following day. Of course if you make your own and skip the preservatives, the bread will mold even faster. Heat, humidity and light are all bad for bread but great for fungi or mold, so consider your fridge your best bet to keep your bread fresh and yummy.
